Ass jerky dried on the saddle bag

Ass jerky is lean meat cut from a human or a ghoul, dehydrated to prevent spoilage. It's one of The Ghoul's own recipes, who uses cuts sliced with a hawkbill knife from the largest muscle in the human body, the gluteus maximus (thus the name), and dried in the sun on his saddle bag, attached with a string. This is similar to preparing beef jerky using top-round cuts.[1]

He rationalizes this cannibalism as a simple necessity: "Sometimes a fella's got to eat a fella."[2]
