Invisible Item Frame + Baseless Armor Stand
Place the item frame/armor stand into a crafting grid. The resulting knowledge book will give you the custom item

Item Text Modifier
Place a redstone block and name tag into a crafting grid.
How to use:
-Drop the item to cycle between 4 options: Bold, italic, underline, and strikethrough
-Place the item into your offhand and place the item you want to modify the name of in your main hand
-Press right click :)

Dead Bush
Place an azalea or flowering azalea into a stonecutter

Dead Coral Block
Place the corresponding coral block into a stonecutter to dry it
