You can get different potion effects for different levels
At level 5, you get water breathing and night vision, to toggle night vision do:

At level 30, you get luckLevel limits
For strength your limit is level 60, with an additional 3 damage, which doesn't seem like a lot but it really helps
For health your limit is level 80, with an extra 20 HP (10 hearts), or just double your base health.
For speed your limit is only level 50, with 1.5x speed (0.150), I decided to not make this too high or it can be annoying for players.
For knockback I haven't tested much but it is set to 7 with a max of level 60.

Editing
To edit the datapack to your own liking, open the file
Level up > data > level_up > functions > level_buffs.mcfunction
if you cannot open the file, you can drag and drop the mcfunction into visual studio code or notepad, or whatever you use for coding.
Just change the values to your own liking.
if you're using visual studio code I recommend getting "Data-pack helper plus" by SPGoding, you may have to trust it each time you use visual studio and I'm unsure how to stop that, but the extension helps alot.
