F&B Consultant with forty genuine years of Catering experience in Hotels, Restaurants, Stadia, Arts & Heritage. Industry columnist for 13 years, twenty years as Consultant Chef to Mcfc, former judge on BBC MasterChef.
Well let’s start off with the title of F&B consultant or Catering consultant or Food service consultant or Hospitality consultant or Restaurant consultant oh yes of course there is Chef consultant .. I’m sure there are many more. I occasionally get asked ‘JBS what are you doing in the F&B industry nowadays?’ Sometimes it is easier and simpler to just reply and smile ‘all is good’, then talk about Football. Or as one Chief Exec from a Retail beast asked me , ‘describe what you do in three words’. My heart said reply ‘I’ve no idea’ however my brain replied ‘all things food’ I regret that. But more important than titles, association initial badges, labels and signatures, egos and back slapping is ……go get and help businesses by assisting, driving, supporting pushing and influencing people in the tough tough world in the 2023 F&B industry. Especially when you have spent the last two hundred years in so many varied sectors. Be it Theme parks, Stadia, NPD, Retail, Healthcare, Arts etc and then the Hotel and Restaurant chunk. I now experience like never before industry F&B people wanting to engage and listen to those with a few grey hairs or a few bits of no grey hair. It’s all about the industry landscape, the issues, the challenges, the threats and the dirty filthy horrible stuff. Understanding industry trends, probabilities and the threats and preemptions are bloody crucial. As is reviewing consequences, impacts and implications to making decisions or not making them. So reaching out and being human is crucial. I like my feet on the ground so one minute it’s helping, driving, pushing and sharing knowledge and wisdom with local tiny F&B, or blue chip corporate beasts or international brands. but when I’m asked again to describe in three words … it will be ‘I’ve no bloody idea’.
